[W126 Coupe] 1985 SEC temperature gauge

Just had my mechanic put in a new or rather he said it was rebuilt temp gauge and the car is running
today at almost at 110 degrees.
The right side of the hood felt incredibly hot.  Heard gurgling but didn't want to
get hit by hot water so left the hood shut.  Didn't see any steam but the gurgling sound
continued for 8 minutes.  Any thoughts?
